My favorite Chinese dish is my favorite Chinese dish not because of a certain taste but because of the memories that come with it.
I first tried this homemade dish when I was three years old, suffering from an intense fever from the flu. I actually got sick very often when I was young so this dish was always a treat. I’d always pick out the largest dough pieces and sweetest tomatoes.
The dish was 西红柿疙瘩汤, which essentially translates to Soup with Tomato and Pieces of Dough. Sounds pretty weird- I guess it gets lost through translation.
My parents immigrated to the US from China, bringing Chinese food customs and family recipes with them. Among the food recipes with this delicious, warm soup. When my mom was young, she got sick very often - she’d spend every winter at home, unable to go outside. So my grandma would always make her this soup. And many years later, my mother would carry this tradition to me.
The soup is made from dough and tomato, with some oil and salt for taste. A very easy-to-make dish and quick to prepare. Once our house lost power due to a snowstorm, and we didn’t prepare really well so we salvaged the tomatoes and dough we had and drank this soup every night. The soup kept us warm through the dark days of winter.
The dish isn’t considered eccentric by Chinese food standards. Most people probably know it as a sort of generic quick Chinese food. Some might not even consider it to be an actual dish as it is never served in restaurants. But even though it’s not the “coolest” Chinese dish it does bring back some good memories of the past and I guess that makes me enjoy it even more.

Chinese are famous for their cuisine. Chinese are the ultimate gourmet. Especially in south China, they would say they'd eat everything that has four legs besides the dinner table, everything that has two wings besides a plane. Many of the dishes served in China may really surprise newcomers. And many of these dishes are so called medicinal dishes believed to have extraordinary nutritional value, including Shark Fin, Swallow Nest.
Snake soup is among the most treasured soups in China. Then there are also snake gall and blood mixed in liquor which supposedly will brighten your eyes. Some "westernized" Chinese would suggest that if Adam and Eve had been Chinese we humans would still be in the Garden of Eden as they would have eaten the snake.
Chopsticks are the main table utensils in China. Chinese children starts with a spoon but will adapt to chopsticks as early as when he just turns one. As a gift chopsticks symbolize straightforwardness, because of its shape. Chinese chopsticks don't have pointed tip, unlike the Japanese style that is refined to pick out the bones for their main diet, fish. Chinese chopsticks are mostly of bamboo, but today there are more and more wooden ones and plastic ones.
Foreigners are not expected to use chopsticks proficiently, but if they do, they will give a mighty impression. Therefore before you go to China, go to the local Chinese restaurant, if not to find authentic Chinese food, at least you can practice the use of chopsticks. If in your first meal in China you don't have to use chopsticks, then if you still can't handle the two sticks to pick up a big shrimp in your tenth meal, you show your incompetence in learning and the willingness to learn.

《Chinese Cuisine Food Culture》 As a country that pays great attention to courtesy, our cuisine culture is deep rooted in China''s history.
As a visitor or guest in either a Chinese home or restaurant you will find that table manners are essential and the distinctive courtesies displayed will invariably add to the enjoyment of your meals and keep you in high spirits!
Respect First It is really an admirable custom to respect others at the table, including the aged, teachers and guests while taking good care of children. Chinese people stress filial piety all the time.
The practice of presenting the best or fine food first to the senior members of the family has been observed for countless generations.
In ancient times the common people led a needy life but they still tried their best to support the elder mother or father who took it for granted.
Although the hosts in China are all friendly and hospitable, you should also show them respect. Before starting to eat dinner, the host may offer some words of greeting.
Guests should not start to eat until the host says, ''Please enjoy yourself'' or something like that, otherwise it suggests disrespect and causes displeasure.
